Instructions

  1. Sauté the onion. Heat a skillet over medium-high heat and add a small amount of oil. Add the diced onion and cook until soft and translucent, about 3-4 minutes.
  2. Cook and season the ground beef. Add the ground beef to the skillet, breaking it up as it cooks. Cook until browned and fully cooked through, about 7-8 minutes. Sprinkle the taco seasoning over the beef and stir well to combine.
  3. Melt the cheese. Reduce the heat to low. Sprinkle the shredded cheddar and Monterey Jack cheeses evenly over the beef in the skillet. Cover the skillet and let the cheese melt, about 2-3 minutes.
  4. Toast the hoagie rolls. While the cheese melts, slice the hoagie rolls in half. Toast them in a hot skillet or under a broiler until the bread is golden and slightly crispy, about 2-3 minutes per side.
  5. Assemble the sandwich. Spread mayonnaise evenly on both halves of each toasted roll. Spoon the cheesy beef mixture onto the bottom halves. Top with diced tomato, chopped cilantro, and sliced jalapeño if using.
