Ingredients
Scale
Shrimp and Seasonings
- 1 pound raw large shrimp, peeled and deveined
- Salt and black pepper, to taste
- 1 teaspoon dried Italian seasoning
- 1 teaspoon paprika
- ½ teaspoon crushed red pepper flakes (optional)
Vegetables and Aromatics
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 3 cups fresh baby spinach
Cheese and Dairy
- 2 tablespoons olive oil
- ¾ cup heavy cream
- ¼ cup cream cheese, softened
- ⅓ cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
Garnish
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat Oven: Preheat your oven to 400°F and lightly grease a medium baking dish to prevent sticking and help with cleanup.
- Sauté Vegetables: Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Then add halved cherry tomatoes and fresh baby spinach. Cook until the spinach wilts, stirring occasionally.
- Make Cream Sauce: Stir in heavy cream, softened cream cheese, grated Parmesan cheese, dried Italian seasoning, paprika, and crushed red pepper flakes if using. Simmer the mixture for 3 to 4 minutes until it thickens slightly, stirring occasionally to combine the flavors.
- Prepare Shrimp: Arrange the peeled and deveined shrimp in a single layer in the prepared baking dish. Season the shrimp evenly with salt and black pepper to taste.
- Combine Shrimp and Sauce: Pour the creamy sauce evenly over the shrimp in the baking dish. Gently toss or stir to ensure each shrimp is well coated with the sauce.
- Add Cheese and Bake: Sprinkle shredded mozzarella cheese evenly over the top of the shrimp and sauce mixture. Bake uncovered in the preheated oven for 12 to 15 minutes, or until the shrimp turn pink and the cheese is bubbly and lightly golden brown.
- Garnish and Serve: Remove the dish from the oven and garnish with freshly chopped parsley. Serve hot for a delicious low-carb meal.
Notes
- For spicier heat, increase the crushed red pepper flakes or add a pinch of cayenne pepper.
- You can substitute fresh Italian seasoning for dried if available, adjusting quantity to taste.
- Serve with a side of cauliflower rice or a fresh green salad for a complete low-carb meal.
- Make sure not to overcook the shrimp to keep them tender and juicy.
- Leftovers can be stored in an airtight container in the fridge for up to 2 days.
