Instructions

  1. Preheat the Grill: Preheat the grill to medium heat to prepare for grilling the vegetables.
  2. Season the Vegetables: In a large bowl, combine sliced zucchini, red bell pepper, and red onion. Drizzle with olive oil, season with salt, pepper, dried oregano, and basil. Toss well to coat all vegetables evenly.
  3. Grill the Vegetables: Place the seasoned vegetables on the preheated grill and cook for 5-7 minutes until tender and nicely charred with grill marks. Remove from grill and set aside.
  4. Sauté the Spinach and Garlic: Heat a little olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, then add spinach and cook until wilted. Remove from heat.
  5. Assemble the Quesadillas: Lay tortillas flat. On half of each tortilla, layer grilled vegetables, sautéed spinach, halved cherry tomatoes, crumbled feta, and shredded mozzarella. Fold the tortillas in half to enclose the filling.
  6. Grill Quesadillas: Place the assembled quesadillas back on the grill. Cook each side for 3-4 minutes until tortillas are golden brown and the cheese inside is melted.
  7. Serve: Remove quesadillas from the grill, let them cool slightly, then cut into wedges and serve warm.
