Ingredients
Scale
Meat
- 1/2 pound bacon
Produce
- 1/4 cup green onions, sliced
Dairy
- 6 large eggs
- 1 1/2 cups cheddar cheese, shredded
- 1/2 cup heavy cream
Frozen & Packaged
- 2 cups hash browns
Instructions
- Crisp bacon: Cook the bacon in a skillet over medium heat until thoroughly crisp. Once done, remove from the pan, let cool slightly, then crumble into small pieces.
- Layer hash browns: Spread half of the hash browns evenly in the bottom of a baking dish, creating the first layer of your lasagna.
- Whisk eggs and cream: In a bowl, whisk together the 6 large eggs and 1/2 cup heavy cream until fully combined and slightly frothy.
- Pour egg mixture over potatoes: Pour half of the egg and cream mixture evenly over the hash browns layer in the baking dish.
- Crumble bacon between layers: Sprinkle half of the crumbled crispy bacon evenly over the egg-soaked hash browns.
- Sprinkle cheese generously: Add a layer of shredded cheddar cheese over the bacon.
- Repeat layering process: Create a second layer by repeating the previous steps – remaining hash browns, egg mixture, crumbled bacon, and cheese.
- Bake at 350°F: Preheat your oven to 350°F (175°C). Cover the baking dish with foil and bake for 25 minutes.
- Uncover to brown top: After 25 minutes, remove the foil and continue baking for another 15 minutes or until the top is nicely browned and bubbly.
- Let rest: Remove from the oven and let the breakfast lasagna rest for 10 minutes to set and make slicing easier.
- Garnish and serve: Sprinkle the top with fresh sliced green onions before serving for a fresh, colorful finish.
