Instructions
- Preheat and prepare the pan: Preheat your oven to 350°F (175°C). Lightly grease the bottom of a 9×13-inch baking pan with a little butter to prevent sticking.
- Mix peaches and sugar: In the prepared pan, add the sliced peaches and 1/4 cup sugar, stirring gently to coat the peaches evenly. Optionally, sprinkle the cornstarch over the peaches to help thicken the juices while baking.
- Make the cobbler batter: In a separate bowl, combine the melted butter, 3/4 cup sugar, vanilla extract, flour, baking powder, and salt. Mix thoroughly until a batter with a consistency similar to cookie dough forms.
- Assemble the cobbler: Drop scoops of the batter over the peaches in the pan. Spread gently with a spoon or your fingers to cover the peaches, but don’t worry about making it perfect—the rustic look adds charm.
- Bake the cobbler: Place the pan in the oven and bake for 30 minutes. You should see the peaches bubbly around the edges. If not, refer to notes for adjustments.
