Instructions
- Parboil the zucchini: Bring a pot of water to a boil and add the diced zucchini. Cook for 3 minutes until just tender. Drain the water and set the zucchini aside to cool.
- Mix the casserole ingredients: In a large bowl, combine the parboiled zucchini with mayonnaise, shredded cheddar cheese, slightly beaten eggs, pepper, and garlic powder. Stir well to evenly incorporate all ingredients.
- Prepare the baking dish: Grease a 1 1/2 quart baking dish with butter or nonstick spray. Pour the zucchini mixture evenly into the dish, spreading it to the edges.
- Add the breadcrumb topping: In a small bowl, combine the Panko breadcrumbs with melted butter until the crumbs are evenly coated. Sprinkle this mixture evenly over the zucchini casserole.
- Bake the casserole: Place the baking dish in a preheated oven at 350°F (175°C). Bake uncovered for 35 minutes, or until the casserole is set, the zucchini is fork tender, and the breadcrumb topping is golden and crispy.
