Instructions

  1. Preheat Oven: Preheat your oven to 180°C (356°F) to prepare for roasting the vegetables and garlic.
  2. Prepare Mushrooms and Onions: Slice the mushrooms and onions as desired and place them evenly on a baking sheet.
  3. Season Vegetables: Sprinkle fresh thyme, salt, and black pepper over the mushrooms and onions. Drizzle olive oil and toss everything to ensure even coating.
  4. Add Cream Cheese and Garlic: Dot the cream cheese around the mushrooms and onions on the baking sheet. Place the whole garlic bulb with the cut side up on the sheet and drizzle the exposed cloves with a little olive oil.
  5. Bake: Cover the baking sheet with aluminium foil to retain moisture. Bake in the preheated oven for 30-40 minutes until the garlic is soft and vegetables are tender.
  6. Cook the Pasta: While the veggies are baking, cook pasta according to package instructions until al dente. Drain and set aside.
  7. Combine Everything: Once the baking is complete, squeeze the softened roasted garlic cloves into a bowl and mash into a smooth garlic paste. Add the roasted vegetables, mashed garlic, baby spinach, and cooked pasta back onto the baking sheet. Toss everything thoroughly to combine and evenly coat the pasta with creamy garlic mushroom mixture.
