For the salad

  • 2 cans black beans, drained and rinsed
  • 2 cups corn kernels (fresh, frozen & thawed, or canned)
  • 2 cups finely chopped red cabbage
  • 1 cup diced tomatoes, seeds removed
  • 1 cup shredded carrots
  • ½ cup sliced green onions
  • ½ cup chopped fresh cilantro

For the high-protein ranch

  • 1 cup plain Greek yogurt
  • 2 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried dill
  • 1 tsp dried parsley
  • 1 tsp dried chives
  • ½ tsp smoked paprika
  • ¾ tsp salt, or to taste

Instructions

  1. Prepare the Chicken: In a bowl, combine the BBQ sauce, chopped chipotle peppers or chipotle chili powder, smoked paprika, garlic powder, onion powder, and salt. Add the boneless, skinless chicken thighs, coating them thoroughly in the mixture. Let the chicken marinate for at least 30 minutes, or up to 2 hours in the refrigerator, to enhance flavor.
  2. Cook the Chicken: Preheat a grill or stovetop skillet over medium-high heat. Cook the marinated chicken thighs for about 6-8 minutes per side, or until fully cooked through and nicely charred on the outside. Internal temperature should reach 165°F (74°C). Remove from heat and allow to rest for 5 minutes before chopping into bite-sized pieces.
  3. Prepare the Salad Ingredients: While the chicken is cooking, rinse and drain the black beans. Prepare the corn kernels (if using frozen, thaw first).   4. Make the High-Protein Ranch Dressing: In a small bowl, whisk together the Greek yogurt, apple cider vinegar, garlic powder, onion powder, dried dill, dried parsley, dried chives, smoked paprika, and salt until smooth and creamy. Adjust salt to taste.
