- 5 large eggs

Stir Fry Ingredients
- 2 tbsp vegetable oil (divided)
- 3 cloves garlic, minced
- 1 green onion, chopped (divide white and green parts)
- 2 medium-sized tomatoes, cut into 8 wedges each
- 2 tbsp ketchup
- 1 tbsp oyster sauce (or soy sauce)
- 1/2 tbsp sugar
- 1/3 cup water
- 1 tsp sesame oil
Instructions
- Prepare the eggs: Crack the eggs into a medium bowl and season with a pinch of salt and white or black pepper. Beat the eggs until smooth and set aside for cooking.
- Cook the eggs: Heat 1 tablespoon of vegetable oil in a wok over medium-high heat. Pour in the beaten eggs and gently stir occasionally, cooking until the eggs are just set but still slightly runny. Remove the eggs from the wok back into the bowl and wipe the wok clean.
- Sauté aromatics: Add the remaining 1 tablespoon of vegetable oil into the wok. Add the minced garlic and the white parts of the chopped green onion. Stir-fry for about 15 seconds or until fragrant.
- Cook the tomatoes and sauce: Add the tomato wedges, ketchup, oyster sauce, sugar, and water to the wok. Stir and cook for 1 to 2 minutes, until the tomatoes soften and release their juices.
- Combine eggs and finish: Pour the cooked eggs back into the wok with the tomato mixture. Stir gently to combine and heat through. Taste and add salt if needed. Drizzle with sesame oil and garnish with the green parts of the chopped green onion before serving.
