Instructions

  1. Heat the oil: In a large pot with a lid, warm 1 tablespoon of vegetable or olive oil over medium heat until shimmering.
  2. Sauté the vegetables: Add the diced onion, minced garlic, diced carrot, and sliced celery to the pot. Cook for 5 to 7 minutes, stirring occasionally, until the vegetables are softened and fragrant.
  3. Add peas and broth, then simmer: Stir in the 2 cups of split peas and pour in 6 cups of vegetable broth. Cover the pot with a lid, reduce the heat to low to maintain a gentle simmer, and cook for 45 minutes until the peas become tender.
  4. Uncover and reduce: Remove the lid and continue cooking the soup uncovered for another 15 minutes to thicken and concentrate the flavors.
  5. Season and serve: Taste the soup and season with salt and pepper as desired. Serve hot, optionally garnished with fresh herbs or a drizzle of olive oil.
