  • Total Time: 40 minutes
  • Yield: 8 mini oat date cups 1x
  • Diet: Vegan

Description

Delicious and healthy Vegan Oat Date Cups featuring a naturally sweet date center surrounded by a spiced oat crumble. These nutritious, no-refined-sugar treats are perfect for a wholesome snack or a light dessert, combining warm spices like cinnamon and cardamom with the rich flavors of almond butter and coconut oil.

Ingredients

Scale

Date Centre

  • 120g dates
  • 60ml water
  • Pinch of salt

Oat Crumble

  • 55g ground oats
  • 45g rolled oats
  • 1/2 tsp baking powder
  • Pinch of salt
  • 1/2 tsp cinnamon
  • 1/4 tsp cardamom
  • 2 tbsp coconut oil, melted
  • 2 tbsp almond butter

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (160°C fan assisted) or 350°F to prepare for baking the oat date cups.
  2. Prepare Date Paste: Place the dates and water into a pan over low to medium heat. Cook while mashing the dates with the back of a wooden spoon until you achieve a smooth, thick, and spreadable date paste. Then set aside to cool completely.
  3. Mix Oat Crumble: In a bowl, combine ground oats, rolled oats, baking powder, salt, cinnamon, and cardamom. Stir in the melted coconut oil and almond butter until evenly mixed.
  4. Assemble Cups: Press half of the oat crumble mixture firmly into silicone cupcake or muffin molds, ideally mini cupcake molds for about 8 servings.
  5. Add Date Layer: Spread the cooled date paste evenly over the pressed oat base in each mold.
  6. Top with Crumble: Sprinkle and crumble the remaining oat mixture over the date layer in each mold, distributing it evenly.
  7. Bake: Place the molds in the oven and bake for 20-25 minutes, or until the crumble is golden and set.
  8. Cool and Serve: Remove from the oven and let cool completely. For best flavor and texture, chill in the refrigerator before serving.
  9. Storage: Store the oat date cups in an airtight container in the fridge for 3-4 days to maintain freshness.

Notes

  • Using mini silicone cupcake molds yields about 8 servings; normal size molds will yield fewer.
  • The date paste must be smooth and spreadable to create a good filling layer.
  • Serving chilled enhances the flavor and makes them easier to handle.
  • Almond butter can be substituted with any nut or seed butter depending on preference or allergy.
  • Ensure coconut oil is melted but not hot when mixing to avoid cooking the almond butter.
