- 120g dates
- 60ml water
- Pinch of salt
Oat Crumble
- 55g ground oats
- 45g rolled oats
- 1/2 tsp baking powder
- Pinch of salt
- 1/2 tsp cinnamon
- 1/4 tsp cardamom
- 2 tbsp coconut oil, melted
- 2 tbsp almond butter
Instructions
- Preheat Oven: Preheat your oven to 180°C (160°C fan assisted) or 350°F to prepare for baking the oat date cups.
- Prepare Date Paste: Place the dates and water into a pan over low to medium heat. Cook while mashing the dates with the back of a wooden spoon until you achieve a smooth, thick, and spreadable date paste. Then set aside to cool completely.
- Mix Oat Crumble: In a bowl, combine ground oats, rolled oats, baking powder, salt, cinnamon, and cardamom. Stir in the melted coconut oil and almond butter until evenly mixed.
- Assemble Cups: Press half of the oat crumble mixture firmly into silicone cupcake or muffin molds, ideally mini cupcake molds for about 8 servings.
- Add Date Layer: Spread the cooled date paste evenly over the pressed oat base in each mold.
- Top with Crumble: Sprinkle and crumble the remaining oat mixture over the date layer in each mold, distributing it evenly.
- Bake: Place the molds in the oven and bake for 20-25 minutes, or until the crumble is golden and set.
- Cool and Serve: Remove from the oven and let cool completely. For best flavor and texture, chill in the refrigerator before serving.
- Storage: Store the oat date cups in an airtight container in the fridge for 3-4 days to maintain freshness.

- Using mini silicone cupcake molds yields about 8 servings; normal size molds will yield fewer.
- The date paste must be smooth and spreadable to create a good filling layer.
