Instructions

  1. Step 1: Preheat your oven to 180°C (160°C fan assisted) or 350°F.
  2. Step 2: Add the dates and water to a pan and cook over low to medium heat. Mash the dates continuously using the back of a wooden spoon until you get a smooth, thick, and spreadable date paste. Remove from heat and let it cool.
  3. Step 3: In a bowl, mix together the ground oats, rolled oats, baking powder, salt, cinnamon, cardamom, melted coconut oil, and almond butter until well combined.
  4. Step 4: Press half of the oat mixture evenly into silicone cupcake or muffin molds. Mini molds are recommended to make about 8 servings, but regular size can also be used.
  5. Step 5: Spread the cooled date paste evenly over the oat base in each mold.
  6. Step 6: Crumble the remaining oat mixture on top of the date layer in each cup.
  7. Step 7: Bake in the preheated oven for 20-25 minutes until lightly golden and set. Remove from the oven and allow to cool completely.
  8. Step 8: For best flavor and texture, serve the cups chilled.
