Description

This Vegan Baked Oatmeal with Berries is a wholesome, comforting breakfast dish made with ripe bananas, plant-based milk, rolled oats, and fresh berries. Perfectly spiced with cinnamon and vanilla, it’s a nutritious, dairy-free option that can be enjoyed warm and topped with extra berries or crunchy nuts for added texture.

Ingredients

Scale

Base Ingredients

  • 3 ripe bananas, peeled
  • 1 ½ cups plant-based milk
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 cups old-fashioned rolled oats

Berries

  • 1 pint blueberries (reserve some for garnish)
  • 2 cups strawberries, thickly sliced (reserve some for garnish)

Optional Garnish

  • Nuts or granola (for garnish, optional)

Instructions

  1. Preheat and prepare dish: Preheat your oven to 350°F (175°C) and lightly grease a 9×9 inch baking dish to prevent sticking.
  2. Mash bananas and combine ingredients: Place the ripe bananas in the baking dish and mash thoroughly with a fork. Add the plant-based milk, cinnamon, and vanilla extract to the mashed bananas, stirring well to combine.
  3. Add oats and berries: Stir the rolled oats into the banana mixture until fully incorporated. Fold in the blueberries and sliced strawberries carefully to distribute them evenly throughout the mixture.
  4. Bake the oatmeal: Place the baking dish in the preheated oven and bake uncovered for 30 minutes until the oatmeal is set and slightly golden on top.
  5. Cool before serving: Remove the dish from the oven and allow the baked oatmeal to cool and set for about 30 minutes.
  6. Serve and garnish: Serve warm, topping with additional reserved berries and a sprinkle of cinnamon. Optionally, add nuts or granola on top for extra crunch and flavor.

  • Use any type of plant-based milk like almond, soy, or oat milk based on your preference.
