Base Ingredients
- 3 ripe bananas, peeled
- 1 ½ cups plant-based milk
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 2 cups old-fashioned rolled oats
Berries
- 1 pint blueberries (reserve some for garnish)
- 2 cups strawberries, thickly sliced (reserve some for garnish)
Optional Garnish
- Nuts or granola (for garnish, optional)
Instructions
- Preheat and prepare dish: Preheat your oven to 350°F (175°C) and lightly grease a 9×9 inch baking dish to prevent sticking.
- Mash bananas and combine ingredients: Place the ripe bananas in the baking dish and mash thoroughly with a fork. Add the plant-based milk, cinnamon, and vanilla extract to the mashed bananas, stirring well to combine.
- Add oats and berries: Stir the rolled oats into the banana mixture until fully incorporated. Fold in the blueberries and sliced strawberries carefully to distribute them evenly throughout the mixture.
- Bake the oatmeal: Place the baking dish in the preheated oven and bake uncovered for 30 minutes until the oatmeal is set and slightly golden on top.
- Cool before serving: Remove the dish from the oven and allow the baked oatmeal to cool and set for about 30 minutes.
- Serve and garnish: Serve warm, topping with additional reserved berries and a sprinkle of cinnamon. Optionally, add nuts or granola on top for extra crunch and flavor.
