- 3 tbsp butter
- 1 medium onion, diced
- 2 garlic cloves, minced
- 6 oz roasted peppers, chopped
- 6 oz roasted peppers, pureed
- ¾ cup heavy cream
- ½ cup grated Parmesan cheese
- Salt and pepper, to taste

Instructions
- Cook the fish: Melt 2 tablespoons of butter in a large, non-stick skillet over medium heat. Add the tilapia fillets and cook for 3-4 minutes on each side until they are cooked through and opaque. Season with salt and pepper, then remove the fish from the skillet and set aside.
- Sauté onions: In the same skillet, add the remaining 1 tablespoon of butter. Add the diced onion and sauté for about 5 minutes until the onions become soft and translucent.
- Add garlic and peppers: Stir in the minced garlic along with both the chopped and pureed roasted peppers. Continue to cook the mixture for another 5 minutes, allowing the flavors to meld.
- Make the sauce: Pour in the heavy cream and sprinkle in the grated Parmesan cheese. Stir well to combine, then turn off the heat. Taste the sauce and adjust the seasoning with salt as needed.
- Return fish to sauce: Place the cooked tilapia fillets back into the skillet, spooning the roasted pepper sauce over the fish to coat generously.
- Garnish and serve: Sprinkle chopped parsley and additional grated Parmesan cheese on top for extra flavor and visual appeal. Serve immediately and enjoy.

- Use jarred or freshly roasted red peppers for the sauce; roasting fresh peppers yourself adds a deeper flavor.
