Ingredients
Scale
Noodles & Sauce
- 2 (5.6-ounce) packages refrigerated Yaki-Soba noodles (seasoning sauce packets discarded)
- 1/4 cup peanut butter
- 1/4 cup reduced sodium soy sauce
- 3 cloves garlic, minced
- 2 tablespoons honey
- 1 tablespoon freshly grated ginger
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon Sriracha (optional)
Chicken & Vegetables
- 1 tablespoon olive oil
- 2 boneless, skinless chicken breasts, cut into 1/2-inch chunks
- 2 cups shredded cabbage
- 1 carrot, peeled and shredded
- 2 green onions, thinly sliced
- 1/4 cup fresh cilantro leaves
- 2 tablespoons chopped peanuts
Instructions
- Prepare the Peanut Sauce: In a medium bowl, whisk together peanut butter, soy sauce, minced garlic, honey, grated ginger, rice vinegar, sesame oil, and Sriracha if using. Set this creamy sauce aside for later use.
- Cook the Noodles: Bring a large pot of water to a boil. Add the refrigerated Yaki-Soba noodles and cook just until loosened, about 1 to 2 minutes. Drain the noodles thoroughly and set aside.
- Cook the Chicken: Heat olive oil in a large skillet over medium heat. Add the chicken pieces and cook until they turn golden brown and are fully cooked through, approximately 3 to 4 minutes.
- Add Vegetables: Stir in the shredded cabbage, shredded carrot, and sliced green onions into the skillet with the chicken. Cook and stir until the vegetables are heated through, about 1 minute.
- Combine Noodles and Sauce: Add the drained noodles to the skillet with the chicken and vegetables. Pour the prepared peanut sauce over everything and stir well to combine and thoroughly coat all ingredients, cooking for about 2 minutes to warm through.
- Serve and Garnish: Immediately serve the noodles garnished with fresh cilantro leaves and chopped peanuts for added texture and flavor.
Notes
- Discard the seasoning sauce packets from the yakisoba noodles as the peanut sauce provides all necessary flavor.
- Adjust the amount of Sriracha to control the spice level according to your preference.
- For a gluten-free version, substitute soy sauce with tamari or coconut aminos and verify all other ingredients are gluten free.
- This dish can be prepared in advance by cooking noodles and chicken separately and combining with sauce just before serving.
- Chopped peanuts can be toasted for extra crunch and flavor if desired.
