For the Peppers

  • 4 large bell peppers (halved, red, orange or yellow)
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch oven-safe baking dish to prevent sticking.
  2. Sauté Aromatics: In a sauté pan over medium-high heat, warm 1 tablespoon olive oil for about 3 minutes, then add diced onions and minced garlic.
  3. Cook Meat: Add 1 pound of ground turkey to the pan and cook for approximately 10 minutes or until the meat is fully browned, stirring occasionally to break up chunks.
  4. Prepare Peppers: While the turkey cooks, slice each bell pepper halfway from top to bottom, remove seeds and white membranes, and place the pepper halves in the prepared baking dish.
  5. Combine Filling: Once the turkey is cooked, remove the pan from heat. Stir in 1 cup tomato sauce, 1 tablespoon taco seasoning, 1 cup black beans, 1 cup frozen corn, and 1 cup cooked rice until the mixture is evenly combined.
  6. Stuff Peppers: Spoon about ¾ cup of the turkey filling into each pepper half, packing the filling tightly with a spoon or your hands for fullness. Then, sprinkle shredded cheddar cheese evenly on top of each stuffed pepper.
  7. Bake: Place the baking dish uncovered in the preheated oven and bake for 15-20 minutes until the cheese is melted, bubbly, and slightly golden. The peppers should be tender enough to pierce easily with a fork.
