Sweet Potato Hummus

- Salt & pepper, to taste
Platter
- ½ cup crumbled feta cheese
- ¼ cup mixed roasted nuts (walnuts, pistachios, or almonds)
- 1 cup cucumber slices
- 1 cup cherry tomatoes
- ½ cup olives
- Warm pita bread or crackers, for serving
- Fresh parsley or mint, for garnish
Instructions
- Roast Sweet Potato: Preheat your oven to 200°C (400°F). Toss the peeled and cubed sweet potato with a drizzle of olive oil, spread it out on a baking tray, and roast for 20–25 minutes until the sweet potatoes are soft and tender.
- Prepare Hummus: Once roasted, allow the sweet potatoes to cool slightly. In a food processor, combine the roasted sweet potato, drained chickpeas, tahini, garlic clove, lemon juice, olive oil, cumin, salt, and pepper. Blend until the mixture is smooth and creamy, stopping to scrape down the sides as needed.
- Assemble the Platter: Spread the sweet potato hummus in the center of a large serving board or platter. Arrange the crumbled feta, mixed roasted nuts, cucumber slices, cherry tomatoes, and olives evenly around the hummus. Add warm pita bread or crackers on the side for dipping.
- Garnish and Serve: Drizzle a bit of extra olive oil over the assembled platter and garnish with fresh parsley or mint leaves. Serve immediately to enjoy the fresh flavors and varied textures.
