Description

This Spicy Shrimp Sushi Hand Roll is a delightful fusion snack that combines chilled sushi rice, spicy shrimp mix, and fresh vegetables wrapped in crisp nori sheets. Perfect for a quick sushi fix at home, it balances creamy, spicy, and crunchy textures with vibrant flavors.

Ingredients

Scale

Sushi Rice

  • 1 cup sushi rice (or short grain white rice)
  • 1 tbsp rice vinegar
  • 2 tsp white sugar
  • pinch of salt

Spicy Shrimp Mix

  • 1 lb cooked shrimp (chopped)
  • ¼ cup Kewpie Mayo
  • 3 tbsp Sriracha (adjust to taste)
  • 2 green onions (chopped)

Vegetables and Garnishes

  • Cucumber (julienned)
  • Avocado (thinly sliced)
  • Carrot (julienned)
  • Clover sprouts
  • Black sesame seeds (for garnish)

Others

  • Nori sheets (cut into halves)

Instructions

  1. Prepare Sushi Rice: Rinse the sushi rice under cold water until the water runs clear to remove excess starch. Cook the rice according to package instructions or using a rice cooker.
  2. Season the Rice: Transfer the cooked rice to a large bowl. While still warm, add the rice vinegar, sugar, and a pinch of salt. Gently fold the ingredients together until well combined and let the rice cool to room temperature.
  3. Make the Spicy Shrimp Mixture: In a separate bowl, combine the chopped cooked shrimp, Kewpie mayo, Sriracha sauce, and chopped green onions. Mix thoroughly to evenly coat the shrimp with the spicy mayo sauce.
  4. Assemble the Hand Rolls: Lay one half of a nori sheet flat on your work surface. Spread 1 to 2 tablespoons of the seasoned sushi rice onto the lower third of the nori sheet.
  5. Add Vegetables and Spicy Shrimp: Layer the julienned cucumber, thinly sliced avocado, julienned carrot, and clover sprouts on top of the rice, then add a spoonful of the spicy shrimp mixture on top.
  6. Roll the Hand Roll: Starting from the edge with the filling, carefully roll the nori into a cone shape, encasing the ingredients inside. Seal the edge by moistening it with a dab of water or a single grain of rice to help it stick.
  7. Garnish and Serve: Sprinkle the top with black sesame seeds for added flavor and presentation. Serve the hand rolls immediately to enjoy their crisp texture and fresh flavors.

Notes

  • If you prefer less spicy, adjust the amount of Sriracha to your taste.
  • Use cooked shrimp to avoid additional cooking time and ensure food safety.
  • Prepare sushi rice ahead of time and keep it covered with a damp cloth to prevent drying out.
  • You can substitute clover sprouts with other sprouts or omit if unavailable.
  • Consume immediately after assembly as the nori will become soggy over time.
