Instructions
- Prepare Sushi Rice: Rinse the sushi rice under cold water until the water runs clear to remove excess starch. Cook the rice according to package instructions or using a rice cooker.
- Season the Rice: Transfer the cooked rice to a large bowl. While still warm, add the rice vinegar, sugar, and a pinch of salt. Gently fold the ingredients together until well combined and let the rice cool to room temperature.
- Make the Spicy Shrimp Mixture: In a separate bowl, combine the chopped cooked shrimp, Kewpie mayo, Sriracha sauce, and chopped green onions. Mix thoroughly to evenly coat the shrimp with the spicy mayo sauce.
- Assemble the Hand Rolls: Lay one half of a nori sheet flat on your work surface. Spread 1 to 2 tablespoons of the seasoned sushi rice onto the lower third of the nori sheet.
- Add Vegetables and Spicy Shrimp: Layer the julienned cucumber, thinly sliced avocado, julienned carrot, and clover sprouts on top of the rice, then add a spoonful of the spicy shrimp mixture on top.
- Roll the Hand Roll: Starting from the edge with the filling, carefully roll the nori into a cone shape, encasing the ingredients inside. Seal the edge by moistening it with a dab of water or a single grain of rice to help it stick.
