Ingredients

Scale

Marinade Ingredients

  • 2 limes, juiced
  • ⅓ cup vegetable oil
  • 2 Tbsp chipotle paste
  • 1 tsp chili powder or chili flakes
  • 1 tsp sweet paprika
  • ½ cup fresh cilantro, chopped
  • 1 tsp cumin powder
  • 1 ½ Tbsp onion powder
  • 1 ½ Tbsp dried oregano
  • 2 tsp garlic powder
  • ½ tsp black pepper
  • 1 ½ tsp salt

Protein

  • Chicken (quantity as desired, typically 1 to 2 lbs)

Instructions

  1. Prepare the Marinade: In a resealable bag, jar, or container, combine lime juice, vegetable oil, chipotle paste, chili powder, sweet paprika, chopped cilantro, cumin, onion powder, oregano, garlic powder, black pepper, and salt. Shake or whisk vigorously until all seasonings are fully dissolved and well combined.
  2. Marinate the Chicken: Add the chicken pieces to the marinade container or bag. Seal and shake or turn to coat the chicken evenly on all sides with the marinade.
  3. Rest the Chicken: Refrigerate the marinating chicken for at least 1 hour to allow flavors to penetrate. For deeper flavor, marinate up to 8 hours or freeze the chicken in the marinade for longer storage.
  4. Cook the Chicken: Remove chicken from marinade, discard marinade. Cook chicken by grilling, baking, or pan-frying according to your preferred method until fully cooked and juices run clear.

Notes

  • Chipotle paste adds a smoky heat; adjust quantity to taste.
  • Marinating time can be from 1 hour up to overnight for more intense flavor.
  • Use fresh lime juice for best acidity and brightness.
  • This marinade works well with chicken breasts, thighs, or drumsticks.
  • If freezing, marinate the chicken first, then freeze in marinade; thaw completely before cooking.
