Cucumber Salad

  • 1 cup cucumber, diced
  • 1/2 cup cherry tomatoes or red bell pepper, chopped
  • 1 tsp lemon juice
  • 1 tbsp olive oil (for salad)
  • Salt to taste

Hummus

  • 1/2 cup hummus (store-bought or homemade)
  • 1 tsp olive oil (for hummus)
  • 1/4 tsp smoked paprika or chili powder

Instructions

  1. Preparation: Dice the chicken breasts into bite-sized pieces and mince the garlic cloves. Dice the cucumber and chop the cherry tomatoes or red bell pepper. Set fresh parsley aside for garnishing later.
  2. Sauté Garlic: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 30 seconds, until fragrant but not browned.
  3. Cook Chicken: Add the diced chicken to the skillet along with tomato paste, honey, chili flakes, lemon juice, salt, and pepper. Stir to combine and cook for 10 to 12 minutes, stirring occasionally, until the chicken is golden and fully cooked through.
  4. Prepare Salad: In a separate bowl, combine diced cucumber, chopped tomatoes or red bell pepper, 1 teaspoon lemon juice, 1 tablespoon olive oil, and salt to taste. Toss the salad gently and let it sit to marinate slightly.
  5. Assemble Hummus Base: Spread half a cup of hummus evenly at the base of each serving bowl. Drizzle 1 teaspoon of olive oil over the hummus and sprinkle with smoked paprika or chili powder for extra flavor and color.
