- 1 (14.5 oz) can diced fire roasted tomatoes with green chiles (not drained)
- 1 (14 oz) can crushed tomatoes
- 1 cup chicken broth
- ½ white onion, chopped

- 1–1½ tsp chipotle chili powder (adjust to spice preference)
- 1½ tsp salt

Instructions
- Combine Ingredients: Add the shredded chicken, black beans, kidney beans, diced poblano peppers, chopped onion, canned diced fire roasted tomatoes (including liquid), crushed tomatoes, chicken broth, and all the spices into your slow cooker. Stir well to combine all ingredients evenly.
- Cook: Cover the slow cooker with its lid. Cook on low heat setting for 6 to 8 hours or on high heat for 3 to 4 hours. This slow cooking process allows flavors to meld and chicken to become tender.
- Serve and Garnish: Once cooking is complete and the chili is hot and flavorful, ladle it into bowls. Top with your choice of optional toppings such as shredded cheese, chopped cilantro, or sliced green onion for added texture and freshness.
