  • 1 medium yellow bell pepper (140g), diced
  • 1 yellow onion (170g), diced
  • 8 oz. bella mushrooms, finely diced
  • 1/2 cup 2% shredded Colby jack cheese (56g)
  • 1 10.2-oz. can GRANDS homestyle buttermilk biscuits (5 count)

Sloppy Joe Sauce

  • 1 8-oz. can tomato sauce (226g), recommended Muir Glen brand
  • 1/2 cup sugar-free ketchup (120g), recommended G Hughes brand
  • 2 cloves garlic, minced
  • 2 Tbsp Worcestershire sauce (30g)
  • 1 Tbsp brown sugar (12g)
  • 2 tsp dry mustard
  • 1 tsp onion powder

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Lightly spray an 8×11” baking dish (a 9×13” works as well) with cooking spray to prevent sticking. Wash and prepare all vegetables by dicing them as specified.
  2. Cook Ground Beef: Heat a large skillet over medium heat and add the ground beef. Season with salt and pepper to taste. Cook the beef, stirring frequently and breaking it into smaller pieces, until no longer pink. Transfer the cooked beef to a large mixing bowl.
  3. Sauté Vegetables: Spray the same skillet with cooking spray again. Add the diced yellow bell pepper, onion, and mushrooms. Cook over medium heat for about 6-7 minutes until the vegetables are tender. Then transfer the cooked vegetables to the bowl with the beef.
  4. Mix Sloppy Joe Sauce: In a separate bowl, whisk together the tomato sauce, sugar-free ketchup, minced garlic, Worcestershire sauce, brown sugar, dry mustard, and onion powder until well combined.
  5. Combine Meat, Veggies, and Sauce: Pour the sauce mixture into the bowl containing the cooked beef and vegetables. Stir thoroughly to ensure all ingredients are evenly coated with the sauce.
  6. Assemble the Bake: Spread the sloppy joe mixture evenly into the prepared baking dish. Sprinkle the shredded Colby jack cheese evenly on top.
  7. Add Biscuit Pieces: Cut each buttermilk biscuit into four pieces. Distribute these pieces evenly across the top of the cheese layer.
  8. Bake: Place the baking dish in the preheated oven and bake for 25 minutes, or until the biscuit tops are golden brown and cooked through. Remove from oven and let cool slightly before serving.

Notes

  • Using 96% lean beef keeps this dish lower in fat while still flavorful.
  • You can substitute the vegetables with your favorites or what you have on hand, such as green peppers or cremini mushrooms.
  • For a spicier kick, add a pinch of cayenne pepper or hot sauce to the sloppy joe sauce.
  • If buttermilk biscuits are unavailable, frozen biscuit dough can be used as a substitute.
