  • ½ small onion, finely chopped

  • ½ tsp ginger, minced
  • 2 green onions, chopped (for garnish)

Instructions

  1. Prepare Shrimp and Rice: If using fresh shrimp, rinse and pat them dry. Ensure the cooked jasmine rice is cold and preferably day-old for best frying texture.
  2. Cook Shrimp: Heat 1 tsp vegetable oil in a large pan or wok over medium-high heat. Add shrimp, season lightly with salt and pepper, and cook for 2-3 minutes per side until they turn pink and opaque. Remove shrimp from pan and set aside.
  3. Scramble Egg: In the same pan, add a bit more oil if needed. Pour in the beaten egg and scramble until fully cooked. Remove and set aside with the shrimp.
  4. Sauté Aromatics: Add remaining vegetable oil to the pan. Sauté finely chopped onions, minced garlic, and ginger for about 1 minute until fragrant and translucent.
  5. Cook Vegetables: Add frozen peas and carrots to the pan. Stir-fry for approximately 2 minutes until they are softened.
  6. Stir-Fry Rice: Push the vegetables to one side of the pan and add the cold cooked jasmine rice. Stir-fry for 2-3 minutes, breaking up any clumps to ensure even heating.
  7. Add Sauces: Drizzle soy sauce and sesame oil over the rice. Mix thoroughly so the rice is evenly coated with the sauce and oils.
  8. Combine All Ingredients: Return the cooked shrimp and scrambled egg to the pan. Stir everything together and cook for another 1-2 minutes to meld the flavors thoroughly.
  9. Garnish and Serve: Remove the pan from heat. Garnish with chopped green onions and sprinkle red pepper flakes if desired for added heat. Serve hot immediately.

Notes

  • Using day-old or cold jasmine rice prevents the fried rice from becoming mushy and helps achieve a better texture.
  • For extra flavor, you can add a splash of oyster sauce or a dash of white pepper if desired.
  • If you prefer a vegetarian version, omit shrimp and replace with tofu or extra vegetables.
