Focaccia Dough

Instructions

  1. Prepare the Baking Pan: Line a 9 x 9-inch baking pan with parchment paper and spray or brush it lightly with oil. Set aside.
  2. Mix the Dough: In a large mixing bowl, combine the self-rising flour and sparkling water. Use a rubber spatula to stir until a sticky dough ball forms.
  3. Rest and Oil the Dough: Cover the dough ball tightly with plastic wrap and let it rest at room temperature for 30 minutes. Then remove the plastic wrap and pour half a tablespoon of olive oil on top. Rub it over the dough to coat.
  4. Stretch and Fold the Dough: Dip your hands in cold water and, with wet hands, stretch the side of the dough upward and fold it back to the center. Repeat this stretch-and-fold process 10 times, turning to a new section each time. This technique helps to develop bubbles and texture in the dough.
  5. Preheat the Oven and Oil the Pan: Preheat your oven to 425°F (220°C). Pour 2 tablespoons of olive oil into the prepared pan.
  6. Shape the Dough in the Pan: Transfer the dough into the baking pan, using a rubber spatula to spread it evenly and prevent sticking to your hands.
  7. Add Oil and Create Dimples: Drizzle the remaining ½ tablespoon of olive oil on top of the dough. Generously oil your hands and press deep dimples into the surface of the dough, even though they may not be as pronounced as traditional yeast focaccia.
