Instructions

  1. Preheat oven: Set your oven to 180°C (160°C fan) or 350°F to prepare for baking the bites.
  2. Mix ingredients: In a bowl, combine the pumpkin seeds, maple syrup, and a pinch of salt. Stir well to ensure all seeds are evenly coated with the syrup.
  3. Shape the bites: Option 1 – Lightly oil a round cookie cutter and place it on a baking sheet lined with parchment paper. Spoon a couple of teaspoons of the pumpkin seed mixture into the cutter and press down firmly. Carefully remove the cutter. Repeat for remaining mixture.
    Option 2 – Without a cookie cutter, spoon clusters of the mixture directly onto the lined baking sheet.
  4. Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes until the bites are golden and set.
  5. Cool and set: Allow the pumpkin seed bites to cool completely on the tray so they harden properly.
  6. Add chocolate coating: Once cooled, dip or drizzle the bites in the melted dark chocolate or use a combination of both for extra flavor and texture.
  7. Refrigerate: Place the chocolate-coated bites in the refrigerator until the chocolate hardens and sets completely.
