Meatloaf Base

  • 2 large eggs
  • ¼ cup (60 ml) milk
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper

Veggie Filling

  • 1 tbsp olive oil
  • 1 small green bell pepper, sliced
  • 1 small red bell pepper, sliced
  • 1 small yellow bell pepper, sliced
  • 1 small onion, sliced
  • 1 tsp steak seasoning or paprika

Cheeses and Garnish

  • 1 cup (100 g) shredded mozzarella
  • 1 cup (100 g) shredded provolone or cheddar
  • ¾ cup (75 g) shredded cheddar + mozzarella mix
  • Fresh parsley, for garnish

Instructions

  1. Prepare the Veggie Filling: Heat olive oil in a skillet over medium-high heat. Add the sliced green, red, and yellow bell peppers along with the sliced onion. Season with steak seasoning or paprika and sauté until the vegetables are soft and slightly caramelized, about 5–6 minutes. Remove from heat and set aside to cool slightly.
  2. Make the Meatloaf Base: In a large bowl, combine the ground beef, finely diced onion, breadcrumbs, eggs, milk, Worcestershire sauce, garlic powder, salt, and black pepper. Mix gently with your hands or a spoon until just combined to avoid overmixing, which can make the meatloaf dense.
  3. Assemble the Meatloaf: Lay out a sheet of parchment paper on a clean surface. Flatten the meat mixture into a large rectangle roughly 1 inch thick. Evenly sprinkle the shredded mozzarella and provolone (or cheddar) cheese over the meat. Layer the sautéed peppers and onions on top of the cheese. Carefully roll the meatloaf from one short end to the other, ensuring the edges are sealed well. Transfer the rolled meatloaf to a baking dish, placing it seam-side down for stability.
  4. Bake the Meatloaf: Preheat your oven to 180°C (350°F). Place the meatloaf in the oven and bake uncovered for 45 to 55 minutes, or until the internal temperature reaches 70°C (160°F) indicating it is fully cooked.
  5. Add Final Cheese Topping: In the last 10 minutes of baking, evenly sprinkle the shredded cheddar and mozzarella mix over the meatloaf. Return to the oven and bake until the cheese is melted, bubbly, and lightly golden.
  6. Rest and Serve: Remove the meatloaf from the oven and allow it to rest for 10 minutes to let the juices redistribute. Slice the meatloaf and garnish with freshly chopped parsley. Serve warm with your choice of mashed potatoes, rice, or a fresh green salad for a complete meal.
