Ingredients
Scale
For the Sauce
- 2 teaspoons minced fresh garlic
- 1 teaspoon minced fresh ginger
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 2 teaspoons toasted sesame oil
- 2 tablespoons red curry paste
- 1/2 cup full-fat coconut milk or cream
- 1/2 cup water
Main Ingredients
- 5 cups chopped bok choy
- 20 frozen chicken and vegetable or pork and vegetable dumplings
For Garnish
- 3 tablespoons chopped cilantro
- 1/4 cup thinly sliced green onion
- 2 teaspoons toasted sesame seeds
- Chili crunch oil (optional)
Instructions
- Prepare the Sauce: In a bowl, combine the minced garlic, minced ginger, soy sauce, rice vinegar, toasted sesame oil, red curry paste, coconut milk, and water. Whisk together until fully blended.
- Cook Bok Choy: Heat a large pan over medium heat and add the chopped bok choy. Sauté for a few minutes until the bok choy is slightly wilted but still vibrant and crisp.
- Add Dumplings: Arrange the frozen chicken and vegetable or pork and vegetable dumplings evenly on top of the sautéed bok choy in the pan.
- Pour Sauce: Pour the prepared sauce evenly over the dumplings and bok choy to ensure they are well coated and can absorb the flavors.
- Cook: Cover the pan with a lid and simmer on medium-low heat until the dumplings are cooked through, approximately 10-12 minutes. The sauce will thicken slightly during this process.
- Serve: Once cooked, garnish the dish with chopped cilantro, thinly sliced green onions, toasted sesame seeds, and a drizzle of chili crunch oil if desired. Serve hot.
Notes
- You can use either chicken and vegetable or pork and vegetable dumplings based on preference.
- Adjust the amount of red curry paste for desired spice level.
- Using frozen dumplings requires a longer cooking time; fresh dumplings may cook faster.
- Chili crunch oil adds extra heat and texture but is optional.
- Substitute bok choy with other greens like napa cabbage or spinach if preferred.
- This recipe can be made vegetarian by using vegetable dumplings and skipping fish-based soy sauces.
