Instructions
- Heat the Oil: Heat 1 tablespoon of olive oil in a large skillet over medium heat to prepare for cooking the chicken.
- Cook and Season the Chicken: Add the diced chicken breasts to the skillet and season with ½ teaspoon smoked paprika, ½ teaspoon garlic powder, ½ teaspoon onion powder, ½ teaspoon salt, and ¼ teaspoon black pepper. Sauté for 5–7 minutes until the chicken is golden and cooked through.
- Add Rice and Liquids: Stir in 1 cup long-grain white rice, 1 ½ cups chicken broth, and ½ cup honey BBQ sauce, along with ½ cup frozen corn and ½ cup rinsed black beans. Mix everything well and bring the mixture to a simmer.
- Simmer and Cook Rice: Lower the heat, cover the skillet, and let it cook for 18–20 minutes, or until the rice is tender and all the liquid has been absorbed.
- Melt Cheese: Remove the skillet from heat, sprinkle ½ cup shredded cheddar cheese over the top, and cover again for 2–3 minutes to allow the cheese to melt completely.
- Garnish and Serve: Finally, garnish with sliced green onions and fresh parsley before serving the dish hot.
