Instructions
- Prepare the oat mixture: In a medium bowl, combine the old fashioned oats, almond flour, natural peanut butter, maple syrup (or honey), vanilla extract, and salt. Mix thoroughly until all ingredients are well incorporated forming a cohesive mixture.
- Shape and freeze the cups: Line a muffin tin with paper liners and evenly distribute the oat mixture among 10 slots. Press down each portion firmly to flatten as much as possible. Place the muffin tin in the freezer for at least 2 hours to set.
- Melt the chocolate topping: While the oat cups freeze, place the chocolate chips and 2 tablespoons of peanut butter in a small pot over low heat. Stir constantly until the mixture is smooth and fully melted.
- Add chocolate topping and freeze again: Remove the muffin tin from the freezer. Spoon about 1 to 2 tablespoons of the melted chocolate peanut butter mixture onto the top of each oat cup and spread it evenly. Sprinkle with flaky salt over each cup. Return the tin to the freezer for another hour to allow the topping to firm up.
