Description

Melted Cabbage is a simple and delicious roasted vegetable dish featuring tender cabbage wedges coated in a garlicky butter and olive oil mixture, then roasted to caramelized perfection and topped with parmesan cheese and fresh parsley.

Ingredients

Scale

Vegetables

  • 1 medium green cabbage, cut into thick wedges

Fats & Oils

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter, melted

Seasonings & Cheese

  • 3 garlic cloves, minced
  • 1/3 cup grated parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and prepare a baking sheet by lining it with parchment paper to prevent sticking and make cleanup easier.
  2. Make Garlic Butter Mixture: In a small bowl, combine the melted unsalted butter, olive oil, minced garlic, salt, and black pepper, mixing thoroughly to create a flavorful coating for the cabbage.
  3. Arrange Cabbage Wedges: Place the thick cabbage wedges flat side down on the prepared baking sheet, ensuring there is enough space between each piece to allow for even roasting and caramelization.
  4. Brush with Garlic Butter: Generously brush each cabbage wedge with the garlic butter mixture, coating all exposed surfaces to infuse flavor and assist with browning.
  5. Roast the Cabbage: Roast the cabbage in the preheated oven for 25 to 30 minutes, flipping the wedges halfway through cooking to ensure they become golden brown and caramelized on both sides.
  6. Add Parmesan Cheese: Remove the roasted cabbage from the oven and immediately sprinkle the grated parmesan cheese over the hot wedges so it melts slightly into the cabbage.
  7. Garnish and Serve: Finally, garnish the melted cabbage with freshly chopped parsley and serve warm as a flavorful side dish or light main course.

Notes

  • For extra crispiness, you can broil the cabbage for 1-2 minutes at the end of roasting but watch carefully to prevent burning.
  • Use freshly grated parmesan cheese for best texture and flavor.
  • If you prefer a spicy kick, add a pinch of red pepper flakes to the garlic butter mixture.
  • This dish pairs well with grilled meats or as a vegetarian main when served with grains or legumes.
  • Leftovers can be stored refrigerated for up to 3 days and reheated gently in an oven or stovetop pan.
