Ingredients
Scale
Vegetables
- 1 medium green cabbage, cut into thick wedges
Fats & Oils
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter, melted
Seasonings & Cheese
- 3 garlic cloves, minced
- 1/3 cup grated parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) and prepare a baking sheet by lining it with parchment paper to prevent sticking and make cleanup easier.
- Make Garlic Butter Mixture: In a small bowl, combine the melted unsalted butter, olive oil, minced garlic, salt, and black pepper, mixing thoroughly to create a flavorful coating for the cabbage.
- Arrange Cabbage Wedges: Place the thick cabbage wedges flat side down on the prepared baking sheet, ensuring there is enough space between each piece to allow for even roasting and caramelization.
- Brush with Garlic Butter: Generously brush each cabbage wedge with the garlic butter mixture, coating all exposed surfaces to infuse flavor and assist with browning.
- Roast the Cabbage: Roast the cabbage in the preheated oven for 25 to 30 minutes, flipping the wedges halfway through cooking to ensure they become golden brown and caramelized on both sides.
- Add Parmesan Cheese: Remove the roasted cabbage from the oven and immediately sprinkle the grated parmesan cheese over the hot wedges so it melts slightly into the cabbage.
- Garnish and Serve: Finally, garnish the melted cabbage with freshly chopped parsley and serve warm as a flavorful side dish or light main course.
Notes
- For extra crispiness, you can broil the cabbage for 1-2 minutes at the end of roasting but watch carefully to prevent burning.
- Use freshly grated parmesan cheese for best texture and flavor.
- If you prefer a spicy kick, add a pinch of red pepper flakes to the garlic butter mixture.
- This dish pairs well with grilled meats or as a vegetarian main when served with grains or legumes.
- Leftovers can be stored refrigerated for up to 3 days and reheated gently in an oven or stovetop pan.
