  • Author: Hugo
  • Total Time: 2 hours 15 minutes
  • Yield: 6 servings 1x
  • Diet: Vegetarian

Description

A refreshing and tangy salad featuring marinated cucumbers, onions, and tomatoes in a sweet and savory vinaigrette, perfect as a light side dish or accompaniment.

Ingredients

Scale

Vegetables

  • 3 Medium tomatoes, largely chopped
  • 2 Large cucumbers, sliced
  • 1 Large onion, sliced into rings

Marinade

  • ¼ cup granulated sugar
  • ¼ cup olive oil
  • ½ cup white distilled vinegar
  • 1 cup water
  • 1 teaspoon basil
  • Salt and pepper to taste

Instructions

  1. Combine Vegetables. Place the chopped tomatoes, sliced cucumbers, and onion rings into a large mixing bowl and toss gently to mix them evenly.
  2. Add Water. Pour the measured cup of water over the vegetables to help them begin softening and absorbing flavor.
  3. Prepare Marinade. In a small bowl, whisk together the olive oil, white distilled vinegar, granulated sugar, dried basil, salt, and pepper until fully combined and the sugar dissolves.
  4. Mix Marinade with Vegetables. Pour the prepared marinade over the vegetables in the large bowl, then stir thoroughly to ensure all vegetables are evenly coated with the dressing.
  5. Marinate. Cover the bowl and refrigerate for at least two hours to allow the flavors to meld and the vegetables to soften slightly before serving.

Notes

  • For best flavor, marinate overnight in the refrigerator.
  • You can substitute apple cider vinegar for white vinegar for a different tang.
  • Adjust sugar quantity to taste for a sweeter or more acidic result.
  • Use fresh basil instead of dried for an enhanced herbal note.
  • Serve chilled as a refreshing salad or side dish.
