Description
A refreshing and tangy salad featuring marinated cucumbers, onions, and tomatoes in a sweet and savory vinaigrette, perfect as a light side dish or accompaniment.
Ingredients
Scale
Vegetables
- 3 Medium tomatoes, largely chopped
- 2 Large cucumbers, sliced
- 1 Large onion, sliced into rings
Marinade
- ¼ cup granulated sugar
- ¼ cup olive oil
- ½ cup white distilled vinegar
- 1 cup water
- 1 teaspoon basil
- Salt and pepper to taste
Instructions
- Combine Vegetables. Place the chopped tomatoes, sliced cucumbers, and onion rings into a large mixing bowl and toss gently to mix them evenly.
- Add Water. Pour the measured cup of water over the vegetables to help them begin softening and absorbing flavor.
- Prepare Marinade. In a small bowl, whisk together the olive oil, white distilled vinegar, granulated sugar, dried basil, salt, and pepper until fully combined and the sugar dissolves.
- Mix Marinade with Vegetables. Pour the prepared marinade over the vegetables in the large bowl, then stir thoroughly to ensure all vegetables are evenly coated with the dressing.
- Marinate. Cover the bowl and refrigerate for at least two hours to allow the flavors to meld and the vegetables to soften slightly before serving.
Notes
- For best flavor, marinate overnight in the refrigerator.
- You can substitute apple cider vinegar for white vinegar for a different tang.
- Adjust sugar quantity to taste for a sweeter or more acidic result.
- Use fresh basil instead of dried for an enhanced herbal note.
- Serve chilled as a refreshing salad or side dish.
