Lasagna Noodles

  • 12 lasagna noodles (cooked to package instructions)

Meat Sauce

  • 16 oz ground beef (85% lean)
  • 24 oz marinara sauce
  • 1/2 cup diced onion
  • 3 garlic cloves (minced)
  • 1 tsp sea salt (or to taste)
  • 1/2 tsp black pepper (or to taste)
  • 1/2 tsp dried oregano

Cheese Mixture

  • 15 oz ricotta cheese
  • 1 large egg
  • 1/4 cup parmesan cheese (shredded)
  • 3 cups mozzarella cheese (shredded, divided)
  • 1/4 cup parsley (chopped, plus more to garnish)

Instructions

  1. Cook the Noodles: Preheat the oven to 375˚F. Cook the lasagna noodles in a large pot of salted water according to package instructions until al dente, being careful not to overcook. Drain the noodles and immediately immerse them in cold water to stop the cooking process and prevent them from sticking together.
  2. Prepare the Meat Sauce: In a deep pan or Dutch oven over medium-high heat, cook the ground beef until it is no longer pink, breaking it up with a spatula, about 2 minutes. Add the diced onion and cook until softened, approximately 3 minutes. Stir in the minced garlic, sea salt, black pepper, and dried oregano; sauté for an additional minute. Pour in the marinara sauce, bring to a simmer, then turn off the heat. Spread 1/2 cup of this meat sauce evenly over the bottom of a casserole dish.
  3. Mix the Cheese Filling: In a large bowl, combine the ricotta cheese, egg, parmesan cheese, 1 1/2 cups of shredded mozzarella cheese, and chopped parsley. Mix thoroughly until the filling is smooth and well combined.
  4. Assemble the Roll Ups: Lay the cooked noodles out flat in a single layer on a large baking sheet. Spread approximately 1/4 cup of the cheese mixture over each noodle, then add a heaping tablespoon of meat sauce in a strip down the center of the noodle. Carefully roll up each noodle and place seam-side down into the prepared casserole dish.
  5. Top the Roll Ups: Spread the remaining meat sauce over the top of the noodles in the dish, then sprinkle the remaining 1 1/2 cups of shredded mozzarella cheese evenly over the sauce. Cover the casserole dish with foil, ensuring the foil doesn’t touch the cheese (using toothpicks in the rolls can help keep foil away if your pan is shallow).
  6. Bake and Broil: Bake the covered dish in the preheated oven at 375˚F for 40 minutes. Remove the foil and broil the roll ups for an additional 2–3 minutes or until the cheese is lightly golden and bubbly. Garnish with additional chopped parsley before serving.

Notes

  • To prevent noodles from sticking, rinse with cold water after boiling.
  • Use toothpicks if needed to keep foil from touching the cheese during baking.
  • Let the lasagna roll ups rest for a few minutes after baking to set before serving.
