Ingredients
Scale
Cookie Dough
- 2 cups Almond Flour
- 3 tablespoons Maple Syrup
- 2 tablespoons Melted Coconut Oil
- 1/4 cup Lime Juice (from 2 key limes)
- 2 teaspoons Lime Zest (optional)
- 1/2 teaspoon Almond Extract
Lime Glaze
- 1/2 cup Powdered Coconut Sugar
- 1 tablespoon Lime Juice
- 1/4 teaspoon Vanilla Extract
Instructions
- Preheat oven: Preheat your oven to 350°F (180°C) and line a cookie sheet with parchment paper to prepare for baking.
- Mix ingredients: In a mixing bowl, combine the almond flour, maple syrup, melted coconut oil, fresh lime juice, almond extract, and lime zest if using. Stir well with a rubber spatula.
- Form dough: When the mixture starts to look dry, use your hands to squeeze it into a dough ball. Adjust the dough by adding a little extra lime juice if too dry or more almond flour if too wet, aiming for a soft dough that can be rolled.
- Scoop dough balls: Divide the dough into 9 equal portions. Lightly oil your hands and roll each portion into a ball.
- Shape cookies: Place each dough ball on the prepared baking sheet spaced about an inch apart. Press down gently with the back of a spoon or your fingers to flatten each ball slightly.
- Bake cookies: Bake in the preheated oven for 12-14 minutes until the edges are slightly golden brown.
- Cool cookies: Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a cooling rack to cool completely before glazing.
- Prepare glaze: In a small bowl, stir together powdered coconut sugar, lime juice, and vanilla extract until thick and smooth. Add more powdered sugar if the glaze is too thin.
- Glaze cookies: Drizzle the lime glaze over the cooled cookies. Optionally decorate with additional lime zest to boost flavor and presentation.
Notes
- Use fresh key limes for the most authentic lime flavor.
- If the dough feels too sticky, chill it briefly before rolling.
- Powdered coconut sugar adds a subtle caramel note and keeps the recipe refined sugar-free.
- Optional lime zest enhances the tanginess and visual appeal of both the dough and the glaze.
- Store cookies in an airtight container to maintain freshness.
