Description

Delight in these zesty and sweet Key Lime Cookies made with almond flour and natural sweeteners. Perfectly soft with a tangy lime kick, these gluten-free treats are enhanced with a smooth lime glaze for an extra burst of flavor. Easy to make and baked to golden perfection, they’re a refreshing dessert ideal for citrus lovers.

Ingredients

Scale

Cookie Dough

  • 2 cups Almond Flour
  • 3 tablespoons Maple Syrup
  • 2 tablespoons Melted Coconut Oil
  • 1/4 cup Lime Juice (from 2 key limes)
  • 2 teaspoons Lime Zest (optional)
  • 1/2 teaspoon Almond Extract

Lime Glaze

  • 1/2 cup Powdered Coconut Sugar
  • 1 tablespoon Lime Juice
  • 1/4 teaspoon Vanilla Extract

Instructions

  1. Preheat oven: Preheat your oven to 350°F (180°C) and line a cookie sheet with parchment paper to prepare for baking.
  2. Mix ingredients: In a mixing bowl, combine the almond flour, maple syrup, melted coconut oil, fresh lime juice, almond extract, and lime zest if using. Stir well with a rubber spatula.
  3. Form dough: When the mixture starts to look dry, use your hands to squeeze it into a dough ball. Adjust the dough by adding a little extra lime juice if too dry or more almond flour if too wet, aiming for a soft dough that can be rolled.
  4. Scoop dough balls: Divide the dough into 9 equal portions. Lightly oil your hands and roll each portion into a ball.
  5. Shape cookies: Place each dough ball on the prepared baking sheet spaced about an inch apart. Press down gently with the back of a spoon or your fingers to flatten each ball slightly.
  6. Bake cookies: Bake in the preheated oven for 12-14 minutes until the edges are slightly golden brown.
  7. Cool cookies: Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a cooling rack to cool completely before glazing.
  8. Prepare glaze: In a small bowl, stir together powdered coconut sugar, lime juice, and vanilla extract until thick and smooth. Add more powdered sugar if the glaze is too thin.
  9. Glaze cookies: Drizzle the lime glaze over the cooled cookies. Optionally decorate with additional lime zest to boost flavor and presentation.

Notes

  • Use fresh key limes for the most authentic lime flavor.
  • If the dough feels too sticky, chill it briefly before rolling.
  • Powdered coconut sugar adds a subtle caramel note and keeps the recipe refined sugar-free.
  • Optional lime zest enhances the tanginess and visual appeal of both the dough and the glaze.
  • Store cookies in an airtight container to maintain freshness.
