  • Diet: Low Carb

Description

This Keto Protein Bread is a low-carb, high-protein loaf perfect for anyone following a ketogenic lifestyle. Made using collagen protein, coconut flour, and egg whites, it offers a fluffy yet dense texture without sacrificing flavor. Ideal as a bread substitute, this recipe is grain-free, gluten-free, and packed with healthy fats and proteins to keep you satiated.

Ingredients

Scale

Dry Ingredients

  • 1/2 cup Perfect Keto Collagen (about 50g)
  • 6 tbsp coconut flour
  • 1 tsp xanthan gum
  • 1 tsp keto-friendly baking powder
  • 1 pinch sea salt

Wet Ingredients

  • 5 eggs, separated (whites and yolks)
  • 3 tbsp full-fat coconut milk
  • 1 tbsp melted coconut oil (+ more for greasing)

Instructions

  1. Preheat Oven: Preheat your oven to 325°F (163°C) to prepare for baking the bread evenly.
  2. Mix Dry Ingredients: In a medium bowl, combine the Perfect Keto Collagen, coconut flour, xanthan gum, baking powder, and sea salt until evenly mixed.
  3. Prepare Wet Mixture: In a separate small bowl, whisk together the egg yolks, full-fat coconut milk, and melted coconut oil until smooth and well combined.
  4. Whip Egg Whites: In another clean bowl, use a mixer to whip the egg whites until stiff peaks form, which will help give the bread its light texture.
  5. Combine All Ingredients: Gently fold the dry ingredients and then the wet mixture into the whipped egg whites. Mix carefully until all components are just incorporated, preserving the airiness.
  6. Prepare Loaf Dish: Lightly grease a 9x5x3-inch loaf pan with coconut oil to prevent sticking.
  7. Bake Bread: Pour the batter into the greased loaf pan and bake in the preheated oven for 40 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool and Slice: Allow the bread to cool completely in the pan before slicing. This ensures a firmer texture and easier slicing.

Notes

  • Make sure to whip the egg whites thoroughly to achieve the best rise and fluffy texture.
  • The bread can be stored in an airtight container in the fridge for up to 5 days.
  • For best results, slice the bread after it has completely cooled to prevent crumbling.
  • You can optionally toast slices for a crispier texture.
  • Use keto-friendly baking powder to keep the recipe low-carb.
