Ingredients
Scale
Dry Ingredients
- 1/2 cup Perfect Keto Collagen (about 50g)
- 6 tbsp coconut flour
- 1 tsp xanthan gum
- 1 tsp keto-friendly baking powder
- 1 pinch sea salt
Wet Ingredients
- 5 eggs, separated (whites and yolks)
- 3 tbsp full-fat coconut milk
- 1 tbsp melted coconut oil (+ more for greasing)
Instructions
- Preheat Oven: Preheat your oven to 325°F (163°C) to prepare for baking the bread evenly.
- Mix Dry Ingredients: In a medium bowl, combine the Perfect Keto Collagen, coconut flour, xanthan gum, baking powder, and sea salt until evenly mixed.
- Prepare Wet Mixture: In a separate small bowl, whisk together the egg yolks, full-fat coconut milk, and melted coconut oil until smooth and well combined.
- Whip Egg Whites: In another clean bowl, use a mixer to whip the egg whites until stiff peaks form, which will help give the bread its light texture.
- Combine All Ingredients: Gently fold the dry ingredients and then the wet mixture into the whipped egg whites. Mix carefully until all components are just incorporated, preserving the airiness.
- Prepare Loaf Dish: Lightly grease a 9x5x3-inch loaf pan with coconut oil to prevent sticking.
- Bake Bread: Pour the batter into the greased loaf pan and bake in the preheated oven for 40 minutes or until a toothpick inserted in the center comes out clean.
- Cool and Slice: Allow the bread to cool completely in the pan before slicing. This ensures a firmer texture and easier slicing.
Notes
- Make sure to whip the egg whites thoroughly to achieve the best rise and fluffy texture.
- The bread can be stored in an airtight container in the fridge for up to 5 days.
- For best results, slice the bread after it has completely cooled to prevent crumbling.
- You can optionally toast slices for a crispier texture.
- Use keto-friendly baking powder to keep the recipe low-carb.
