- 5 Tbsp sugar-free chocolate chips (melted) – 70g
Cookie Dough
- 1/2 cup unsweetened creamy peanut butter – 128g
- 1/4 cup unsalted butter (softened) – 56g
- 1 large egg
- 1/2 tsp vanilla extract – 2.5ml
- 1/4 cup powdered sugar-free sweetener – 48g
- 2 Tbsp coconut flour – 14g
- 1/4 tsp baking soda – 1.5g
- 1/4 tsp salt – 1.5g
- 2 1/2 Tbsp granulated sugar-free sweetener – 30g
Instructions
- Make chocolate “kisses”: Melt the sugar-free chocolate chips in the microwave in 15 to 30 second intervals, stirring until the chocolate is smooth. Pour the melted chocolate into each cavity of the mold, tap lightly to remove air bubbles, and poke a toothpick into each cavity tip to release any trapped air. Refrigerate until the chocolate hardens completely, then carefully remove each kiss from the mold.
- Prepare the dough base: In a bowl, combine the unsweetened creamy peanut butter and softened unsalted butter. Stir or beat them until the mixture is smooth and fully combined. Add the egg and vanilla extract, then stir again until the mixture is homogenous and smooth.
- Add dry ingredients: Mix in the powdered sugar-free sweetener until it dissolves well. Then add the coconut flour, baking soda, and salt. Stir until everything is combined and the dough begins to thicken.
- Chill the dough: Cover the bowl and refrigerate the dough for at least 1 to 2 hours until it is firm enough to handle.
- Preheat oven and prepare baking sheet: Set your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.
- Form the cookies: Place the granulated sugar-free sweetener in a small bowl. Remove the chilled dough from the refrigerator and roll it into smooth balls about 1 inch in diameter.
- Coat and arrange: Roll each dough ball in the granulated sweetener until fully coated. Then place them spaced apart on the prepared baking sheet.
- Bake: Bake the cookies in the preheated oven for 6 to 8 minutes, until the edges are set but the centers remain soft.
- Add the chocolate kisses: Immediately after removing the cookies from the oven, press one prepared chocolate “kiss” into the center of each cookie while they are still warm.
