Instructions

  1. Preheat the waffle maker: Turn on a mini waffle maker and allow it to heat up fully to ensure even cooking and a crispy exterior on the chaffles.
  2. Prepare the batter: Combine shredded mozzarella, eggs, 2 tablespoons of Swerve confectioners sugar substitute, and the cocoa powder in a small blender. Blend until the mixture is completely smooth. Alternatively, use a mixing bowl and whisk to thoroughly combine the ingredients.
  3. Cook the chaffles: Pour about ¼ of the batter into the preheated mini waffle maker. Close the lid and cook for 3-4 minutes on each portion until the chaffle is fully set and cooked through. Repeat for the remaining batter.
  4. Make the topping: In a blender, mix together the softened cream cheese, heavy whipping cream, and 3 tablespoons of Swerve confectioners sugar substitute until the mixture is smooth and creamy.
