Description

This Juicy Pineapple Heaven Cake is a light, airy dessert that combines the fluffy texture of angel food cake with the tropical sweetness of crushed pineapple. Topped with a creamy vanilla pudding and whipped topping mixture, and garnished with cherries and shredded coconut, this cake is perfect for a refreshing treat or a festive occasion.

Ingredients

Scale

Cake

  • 1 box angel food cake mix
  • 1 can (20 oz) crushed pineapple in juice (do not drain)

Topping

  • 1 container (8 oz) whipped topping (Cool Whip), thawed
  • 1 box (3.4 oz) instant vanilla pudding mix
  • 1 can (8 oz) crushed pineapple (do not drain)

Garnish (Optional)

  • Maraschino cherries
  • Shredded coconut

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cake.
  2. Mix Cake Batter: In a large bowl, combine the angel food cake mix with the entire 20 oz can of crushed pineapple including the juice. Stir this mixture thoroughly until it’s well combined and foamy to ensure an even texture in the cake.
  3. Bake the Cake: Pour the pineapple-infused batter into a greased 9×13-inch baking dish. Bake in the preheated oven for 25 to 30 minutes, or until the cake is golden on top and set in the center. Once baked, remove from the oven and allow the cake to cool completely before adding the topping.
  4. Prepare the Topping: In a separate bowl, mix together the thawed whipped topping, instant vanilla pudding mix, and the second can of 8 oz crushed pineapple with juice. Stir until creamy and well incorporated.
  5. Top the Cake: Spread the creamy pineapple topping evenly over the cooled angel food cake to add moisture and flavor.
  6. Garnish and Chill: Optionally, garnish the top of the cake with maraschino cherries and shredded coconut for added color and texture. Chill the cake in the refrigerator before serving to let the flavors meld and the topping set.

Notes

  • Be sure not to drain the crushed pineapple so the cake remains moist and flavorful.
  • Allow the cake to cool completely before adding the topping to prevent it from melting or becoming watery.
  • Chilling the assembled cake enhances the flavor and texture for best results.
  • Optional garnishes like cherries and shredded coconut add visual appeal and complementary flavors.
