Ingredients
Scale
Crab Cake Mixture
- 1 lb. Crab meat
- ⅓ cup Mayonnaise
- 3 Egg yolks
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1 tsp Lemon juice
- ¼ tsp Blackened seasoning
- ¼ cup Chopped parsley
- 1 ¼ cups Bread crumbs
- Salt and pepper to taste
For Frying
- Oil for frying (about 1 inch deep)
Instructions
- Prepare Crab Cake Mixture: In a large mixing bowl, combine the crab meat, mayonnaise, egg yolks, Worcestershire sauce, Dijon mustard, lemon juice, blackened seasoning, chopped parsley, bread crumbs, and season with salt and pepper. Mix gently but thoroughly to evenly distribute the ingredients without breaking up the crab meat too much.
- Form Patties: Shape the mixture into 8 evenly sized crab cakes, making sure they hold together firmly but not too compressed to keep them tender.
- Heat Oil: Pour enough oil into a deep-sided skillet to reach about one inch in depth. Heat the oil over medium-high heat until it reaches approximately 350°F or is hot enough that a small piece of bread sizzles immediately when added.
- Fry Crab Cakes: Carefully add the crab cakes to the hot oil, ensuring not to overcrowd the pan. Fry for 5-8 minutes total, turning once, until both sides are evenly browned and the cakes are cooked through.
- Drain and Serve: Remove the crab cakes with a slotted spoon and place them on a paper towel-lined rack or plate to drain excess oil. Serve warm as an appetizer or main dish.
Notes
- Use lump crab meat for best texture and flavor.
- Do not overmix the crab mixture to maintain the delicate crab chunks.
- Maintaining oil temperature ensures crab cakes are crispy and not greasy.
- Serve with tartar sauce or a lemon wedge for added zest.
- Can be prepared in advance and refrigerated before frying.
