Description

Jiffy Joe is a hearty and comforting casserole that combines savory seasoned ground beef with the tangy Manwich sauce, topped with a cheesy Jiffy cornbread mixture. This dish is perfect for a family dinner, offering a flavorful twist on classic sloppy joe flavors baked under a golden cheesy crust.

Ingredients

Scale

Meat Mixture

  • 12 lbs ground chuck
  • 1 small onion, chopped
  • 67 cloves garlic, chopped
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 15 oz can of Manwich Original
  • 15 oz can of Manwich Bold

Jiffy Mixture & Topping

  • 2 boxes Jiffy Mix (8.5 oz each)
  • 2 eggs
  • 1 cup milk
  • 2 cups shredded cheddar jack cheese
  • 1/4 cup shredded cheddar cheese (for topping)

Instructions

  1. Brown the Meat: In a cast iron skillet, brown the ground chuck while breaking it apart with a meat masher. Add the chopped onion, minced garlic, garlic powder, smoked paprika, cayenne pepper, salt, and pepper. Cook until the meat is fully browned and fragrant.
  2. Prepare the Jiffy Mixture: In a bowl, combine two boxes of Jiffy Mix with the milk and eggs. Using an electric mixer, blend just until incorporated to avoid over-mixing.
  3. Fold in Cheese: Gently fold the shredded cheddar jack cheese into the Jiffy batter and set the mixture aside.
  4. Add Manwich Sauce: Once the meat is browned, stir in both cans of Manwich sauce. Bring the mixture to a boil, then reduce the heat to medium-low to let it simmer.
  5. Simmer the Meat Sauce: Simmer for about 5 minutes, allowing the flavors to meld. Taste and adjust seasoning as needed.
  6. Layer the Jiffy Mixture: Use an ice cream scoop to evenly portion the Jiffy batter on top of the meat mixture in the cast iron skillet. Spread it out evenly with a knife if desired.
  7. Add Cheese Topping and Bake: Sprinkle the 1/4 cup shredded cheddar cheese over the Jiffy layer. Bake in a preheated oven at 350°F (175°C) for 35-40 minutes until the topping is golden and set.
  8. Rest and Serve: Let the casserole rest for 10 minutes before serving to allow it to set and cool slightly. Enjoy your delicious Jiffy Joe!
