Ingredients
Scale
For the Wings:
- 2 lbs chicken wings
- 1½ tbsp jalapeño lime seasoning
- 1 tbsp olive oil
- 1 tsp garlic powder
- 2 tsp chili powder
- Juice of 2 limes, divided (1 for marinade, 1 for finishing)
- Optional: 1–2 fresh jalapeños, sliced for extra heat
- Optional: Zest of 1 lime for extra citrus flavor
Butter Cilantro Lime Toss:
- 1 stick (½ cup) unsalted butter
- 1 tsp chili flakes
- 1 tbsp fresh chopped cilantro
- Juice of 1 lime
Instructions
- Prepare the Marinade: In a bowl, combine olive oil, jalapeño lime seasoning, garlic powder, chili powder, and juice of 1 lime. Mix well to create the marinade.
- Marinate the Wings: Add chicken wings to the marinade and toss until fully coated. Cover and refrigerate for 30 minutes up to 2 hours to allow flavors to penetrate.
- Cook the Wings (Grill Method): Preheat grill to 400°F. Place wings on the grill grate, close the lid, and cook for 6-8 minutes per side, flipping every 6-8 minutes. Continue until wings are golden and crispy with an internal temperature of 185°F, about 35-45 minutes total. Alternatively, add sliced jalapeños on the grill during the last 10 minutes for smoky heat.
- Cook the Wings (Smoker Method): Smoke wings at 300°F for 45 minutes to 1 hour. Increase smoker temperature to 375°F and smoke an additional 15-20 minutes to crisp the skin. Remove when internal temperature reaches 185°F.
- Make Butter Cilantro Lime Sauce: While wings cook, melt unsalted butter in a small pan over medium heat. Stir in chili flakes and chopped cilantro, then add lime juice. Let simmer for 1 minute, then remove from heat.
- Toss Wings in Sauce: Place cooked wings in a large bowl. Pour warm butter cilantro lime sauce over the wings and toss to thoroughly coat. Finish with a squeeze of the remaining lime juice.
- Garnish and Serve: Garnish wings with extra jalapeño lime seasoning, chopped cilantro, and lime wedges for an added fresh citrus touch. Serve immediately.
Notes
- Marinating wings for longer enhances the flavor.
- Ensure wings reach an internal temperature of 185°F for safe and tender meat.
- Using fresh jalapeño slices adds a smoky kick but can be omitted for milder wings.
- Butter cilantro lime sauce can be made ahead and warmed before serving.
- To cook indoors, wings can be baked at 400°F for 40-45 minutes, flipping halfway.
