Instructions

  2. Marinate the Wings: Add chicken wings to the marinade and toss until fully coated. Cover and refrigerate for 30 minutes up to 2 hours to allow flavors to penetrate.
  3. Cook the Wings (Grill Method): Preheat grill to 400°F. Place wings on the grill grate, close the lid, and cook for 6-8 minutes per side, flipping every 6-8 minutes. Continue until wings are golden and crispy with an internal temperature of 185°F, about 35-45 minutes total. Alternatively, add sliced jalapeños on the grill during the last 10 minutes for smoky heat.
  4. Cook the Wings (Smoker Method): Smoke wings at 300°F for 45 minutes to 1 hour. Increase smoker temperature to 375°F and smoke an additional 15-20 minutes to crisp the skin. Remove when internal temperature reaches 185°F.
  5. Make Butter Cilantro Lime Sauce: While wings cook, melt unsalted butter in a small pan over medium heat. Stir in chili flakes and chopped cilantro, then add lime juice. Let simmer for 1 minute, then remove from heat.
  6. Toss Wings in Sauce: Place cooked wings in a large bowl. Pour warm butter cilantro lime sauce over the wings and toss to thoroughly coat. Finish with a squeeze of the remaining lime juice.
