Featuring tender ground beef, hearty pasta, robust tomato sauce, and layers of melty cheeses, this recipe delivers mouthwatering warmth with minimal effort using your slow cooker.

Ingredients

Scale

Meat and Vegetables

  • 1 lb Lean Ground Beef (Substitution: Ground turkey or chicken for a lighter option)
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced (Use fresh for best results)

Liquids and Sauces

  • 4 cups Beef Broth (Substitution: Chicken broth can also be used)
  • 24 oz Pasta Sauce (Choose your favorite store-bought brand)
  • 6 oz Tomato Paste

Seasonings and Pasta

  • 2 tbsp Italian Seasoning (Adjust quantity for personal spice preference)
  • 1 tsp Salt (Always taste before adding more)
  • 1 tsp Pepper
  • 9 sheets Lasagna Noodles (Substitution: Smaller pasta shapes like rotini can be used)

Cheeses and Garnish

  • 1 cup Ricotta Cheese (Can substitute with cottage cheese)
  • 1 cup Mozzarella Cheese, shredded
  • 1/2 cup Parmesan Cheese, grated
  • 1/4 cup Fresh Parsley or Basil, chopped (For garnish)

Instructions

  1. Brown the Meat: In a skillet over medium heat, brown 1 lb of lean ground beef with 2 tbsp Italian seasoning, 1 tsp salt, and 1 tsp pepper for 5-7 minutes until fully cooked. Transfer the browned meat to the slow cooker.
  2. Sauté Aromatics: Using the same skillet, sauté the diced onion and minced garlic for 2-3 minutes until the onions are translucent and fragrant. Add this mixture to the slow cooker.
  3. Add Liquids and Sauces: Pour 4 cups beef broth, 24 oz pasta sauce, and 6 oz tomato paste into the slow cooker, stirring everything together until well combined.
  4. Cook the Soup: Cover the slow cooker and cook the mixture on LOW for 4-5 hours or on HIGH for 2-3 hours to allow flavors to meld and develop.
  5. Add Pasta: Break 9 sheets of lasagna noodles into bite-sized pieces. Stir them into the soup and continue cooking for an additional 30 minutes until the pasta is tender.
  6. Serve and Garnish: Ladle the soup into bowls and top each serving with 1 cup ricotta cheese, 1 cup shredded mozzarella, and 1/2 cup grated parmesan. Garnish with chopped fresh parsley or basil and serve warm.

Notes

  • Ground turkey or chicken can be used instead of beef for a lighter soup.
  • Chicken broth is a suitable substitute if beef broth is not available.
  • For a vegetarian version, omit the meat and use vegetable broth.
  • Smaller pasta shapes like rotini or broken spaghetti can replace the lasagna noodles if desired.
  • Adjust Italian seasoning and salt according to your taste preferences.
  • Use fresh garlic for the best flavor impact.
  • Leftover soup stores well in the refrigerator for up to 3 days.
  • This soup freezes well; thaw overnight in the refrigerator before reheating.
