  • 2 tbsp vegetable oil
  • 500g (1 lb) beef mince
  • 1 onion, sliced
  • 2 garlic cloves, finely chopped
  • 2 cups shredded Chinese cabbage (Napa or wombok cabbage)
  • 1 cup shredded carrot

Noodles and Sauce

  • 250g (9 oz) fresh Chinese egg noodles
  • 2 tbsp oyster sauce
  • 2 tbsp hoisin sauce
  • 1 tsp dark sweet soy sauce
  • 2 tsp white vinegar

Garnish

  • ¼ cup finely sliced spring onion (scallions)
  • Sesame seeds, to serve

Instructions

  1. Heat and sear the beef: Heat the vegetable oil in a wok or large frying pan over high heat. Add the beef mince and spread it out evenly. Let it sear and cook for 5-6 minutes until the juices evaporate and the beef chars slightly, creating a rich, hamburger-like aroma. Use a spatula to lift and toss the beef around to cook evenly.
  2. Stir-fry the vegetables: Add the sliced onion to the pan and stir-fry for about one minute. Add the finely chopped garlic and continue stir-frying for 20 seconds. Then add the shredded Chinese cabbage and stir-fry for another 20 seconds, followed by tossing in the shredded carrot until just wilted. Turn off the heat and set aside.
  3. Cook noodles and combine: Boil the fresh Chinese egg noodles in boiling water for about one minute or until just al dente. Drain well and add the noodles to the pan with the beef and vegetables. Turn the heat back to high and add the oyster sauce, hoisin sauce, dark sweet soy sauce, and white vinegar. Toss everything together thoroughly until well combined and heated through.
  4. Garnish and serve: Scatter the finely sliced spring onions and sesame seeds over the top before serving to add freshness and a nutty crunch.

Notes

  • For extra flavor, you can marinate the beef mince briefly in a little soy sauce and pepper before cooking.
  • Adjust the amount of hoisin and oyster sauce to taste if you prefer a sweeter or saltier dish.
