Instructions

  1. Prepare the Vegetables: Preheat a 5 1/2 quart Dutch oven or soup pot with olive oil over medium heat. Add the diced onion, sliced carrots, and sliced celery and sauté them until they soften and release their aroma, about 5-7 minutes.
  2. Cook the Ground Beef: Add the lean ground beef to the pot, breaking it apart with a spoon or spatula. Cook over medium heat until the beef turns golden brown and is fully cooked through, stirring occasionally to prevent clumps and ensure even browning.
  3. Add Tomatoes and Flavorings: Stir in the canned diced tomatoes, minced garlic, and tomato paste, mixing them well with the meat and vegetables. Then add the peeled and chopped Yukon gold potatoes along with the beef broth. Season the mixture with Italian seasoning, salt, and black pepper, distributing the spices evenly.
  4. Simmer the Soup: Bring the soup to a vigorous boil over medium-high heat, then reduce the heat to low and let it simmer gently for 30 minutes. This allows the potatoes to become tender and the flavors to meld beautifully. Adjust seasoning if necessary during or after simmering.
