Instructions

  1. Preheat oven: Preheat the oven to 350 °F (180 °C). Line a cookie sheet with parchment paper to prevent sticking and promote even baking.
  2. Combine ingredients: In a mixing bowl, mix together the almond flour, maple syrup, melted coconut oil, 2 tablespoons of lemon juice, almond extract, and lemon zest until the mixture is combined evenly.
  3. Form dough: Stir the ingredients with a rubber spatula until the mixture starts to look dry. Use your hands to squeeze it into a dough ball. If the dough is too dry, add a little more lemon juice to soften it. If too wet, incorporate extra almond flour until it reaches a soft, workable consistency.
