Description

These Healthy Chocolate Chickpea Truffles are a delicious and nutritious snack made from simple wholesome ingredients like chickpeas, dates, cocoa powder, and peanut butter. Naturally sweetened with agave syrup and coated in crunchy dry-roasted peanuts, these truffles are perfect for a guilt-free treat that satisfies your chocolate cravings while offering a good source of protein and fiber.

Ingredients

Scale

Base Ingredients

  • 5.3 oz chickpeas (150 g), drained and rinsed if canned
  • 4.2 oz dates (120 g), pitted
  • 2 tbsp cocoa powder
  • 2 tbsp peanut butter
  • Pinch of salt
  • 2 tbsp agave syrup

Coating

  • 1/3 cup dry-roasted unsalted peanuts

Instructions

  1. Soften the Dates: Soak the dates in hot water for 5 minutes to soften them, making them easier to blend into a smooth mixture.
  2. Blend the Ingredients: In a food processor, combine the chickpeas, softened dates, cocoa powder, peanut butter, salt, and agave syrup. Blend until the mixture is smooth and well combined.
  3. Chill the Mixture: Transfer the blended mixture to the fridge and chill for 20 minutes to help firm it up for easier rolling.
  4. Form the Truffles: Once chilled, roll the mixture into 16 to 18 uniform balls using your hands.
  5. Prepare the Coating: Chop the dry-roasted unsalted peanuts into small pieces with the food processor, then roll each truffle ball in the crushed peanuts to coat evenly.
  6. Store and Serve: Place the coated truffles back in the fridge until ready to serve. Enjoy these healthy and tasty treats as a snack or dessert.

Notes

  • Use pitted Medjool dates for the best natural sweetness and texture.
  • For a nut-free version, substitute peanut butter with sunflower seed butter and coat with shredded coconut instead of peanuts.
  • Store truffles in an airtight container in the refrigerator for up to 1 week.
  • For extra flavor, add a splash of vanilla extract or a pinch of cinnamon to the mixture before blending.
  • These truffles can be frozen for up to 1 month; thaw in the refrigerator before serving.
