- ¼ cup low-sodium beef or chicken broth
- ⅓ cup full-fat sour cream
- 2 Tbsp cream cheese (room temperature)

- ⅛ tsp dried thyme

Instructions
- Brown the Beef: Heat a large cast-iron skillet over medium heat. Add the ground beef and cook for about 5 minutes, breaking it up with a spatula, until no pink remains. Drain excess fat, leaving about 1 tablespoon of fat in the pan. Set the cooked beef aside.
- Sauté Aromatics: In the reserved fat, add the diced onion and cook for 3 to 4 minutes until the onion becomes translucent. Add the sliced mushrooms and sauté for an additional 2 minutes until they start to caramelize.
- Add Beans & Seasonings: Stir in the green beans, minced garlic, and low-sodium broth. Cook for 2 to 3 minutes until the beans turn bright green and remain crisp-tender.
- Create Creamy Base: Lower the heat to medium-low. Add the cream cheese to the skillet and stir until fully melted and smooth. Blend in the sour cream to form a creamy sauce that coats the vegetables.
- Combine & Season: Return the cooked ground beef to the skillet. Add salt, freshly ground black pepper, Worcestershire sauce, and dried thyme. Stir gently to evenly combine all the ingredients and coat them in the creamy sauce.
- Cheese Topping: Sprinkle the shredded Colby Jack cheese evenly over the surface of the skillet mixture.
- Melt & Serve: Option A: Place the skillet under the broiler for 1 to 2 minutes until the cheese is golden and bubbly. Option B: Cover the skillet and cook on low heat for 3 to 4 minutes on the stovetop until the cheese melts. Serve hot and enjoy.
Notes
- Use fresh green beans if possible for best texture, but thawed frozen green beans also work well.
- For a lighter version, reduce the cheese topping to 1 cup instead of 2 cups.
- If you don’t have Worcestershire sauce, a splash of soy sauce can be a good substitute for umami flavor.
- This dish can be made in a cast-iron skillet or any oven-safe skillet suitable for broiling.
