- Prepare the Donut Batter: In a large bowl, whisk together gluten-free flour, baking powder, and sugar. In a separate bowl, beat eggs with milk and vanilla extract. Gradually combine the wet ingredients with the dry, mixing until a smooth dough forms. Let the dough rest while preparing the filling.
- Make the Vanilla Pastry Cream: In a saucepan, heat the milk until it just begins to simmer. In a separate bowl, whisk sugar, egg yolks, and gluten-free flour or cornstarch until smooth. Slowly temper the hot milk into the egg mixture, then return everything to the saucepan. Cook over medium heat, stirring constantly, until thickened. Remove from heat, stir in vanilla extract, and chill until set.
- Shape and Air Fry the Donuts: Preheat the air fryer to 350°F (175°C). Lightly flour your surface and roll out the dough to about 1/2 inch thickness. Cut out donut shapes with a donut cutter. Place the donuts in the air fryer basket in a single layer without crowding. Air fry for approximately 6-8 minutes until puffed and golden brown, flipping halfway if needed.
