Description

This Garlic Butter Roasted Potatoes recipe features tender Yukon potatoes perfectly roasted with a flavorful blend of olive oil, melted butter, garlic, and fresh herbs. Crispy on the outside and soft inside, these potatoes make a comforting side dish that’s easy to prepare and ideal for any meal.

Ingredients

Scale

Potatoes

  • 3 pounds small Yukon potatoes

Seasonings and Oils

  • 1/4 cup olive oil
  • 2 tablespoons unsalted butter, melted
  • 2 teaspoons kosher salt
  • 1 teaspoon coarse ground black pepper
  • 8 cloves garlic, minced
  • 1/4 cup fresh parsley, minced

Instructions

  1. Preheat the oven: Set your oven to 400 degrees Fahrenheit and allow it to fully preheat to ensure even roasting of the potatoes.
  2. Prepare the potatoes: Halve the small Yukon potatoes and place them into a large mixing bowl to get ready for seasoning.
  3. Toss with oils and seasonings: Add the olive oil, melted unsalted butter, kosher salt, coarse ground black pepper, and minced garlic to the bowl with the potatoes. Mix thoroughly so each piece is coated evenly for maximum flavor.
  4. Arrange on a baking sheet: Spread the coated potatoes out on a sheet pan in a single layer to ensure they roast evenly and get crisp on all sides.
  5. Roast the potatoes: Place the pan in the preheated oven and roast for 30 minutes. Then, flip the potatoes to the other side and roast for an additional 20 minutes, or until the potatoes are golden brown and tender.
  6. Add fresh parsley and serve: Remove the roasted potatoes from the oven and toss them with the fresh minced parsley. Optionally, drizzle a little extra olive oil over the top before serving to add extra moisture and shine.

Notes

  • You can substitute Yukon potatoes with red potatoes or fingerlings for a different texture and flavor.
  • For a spicier variation, add a pinch of smoked paprika or chili flakes with the seasoning mix.
  • Ensure potatoes are dry before tossing with oil to get crispier skin.
  • This recipe can be doubled or halved depending on your serving needs.
  • Leftovers reheat well in a skillet or oven to maintain crispiness.
