Steak Bites
- 1 pound ribeye steak, cut into 1 x 1 inch cubes
- 2 tbsp Onion Butter Rub
Potatoes
- 16 oz potatoes, cut into chunks
- 1 tbsp avocado oil
Herb Butter Sauce
- 4 tbsp Kerry Gold Unsalted Butter
- 3 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- 1/2 tbsp fresh chives, chopped
- 1/2 tbsp fresh thyme, chopped
- 1/2 tbsp fresh rosemary, chopped
Instructions
- Prepare the Potatoes: Cut the potatoes into chunks and soak them in ice water for about 15 minutes to remove excess starch. Drain and pat dry thoroughly before cooking.
- Season the Steak Bites: Cube the ribeye steak into 1 x 1 inch pieces and season evenly with 2 tablespoons of Onion Butter Rub, ensuring each cube is well coated.
- Sear the Steak: Heat a pan over high heat and add 1 tablespoon avocado oil. Place the steak cubes in the pan and sear for 3-4 minutes, turning frequently to brown all sides evenly. Once seared, remove the steak bites from the pan and set aside.
- Cook the Potatoes: In the same pan, add the potato chunks and cook for 3-4 minutes, stirring occasionally, until they start to soften and develop a golden color.
- Add Herb Butter and Garlic: Lower the heat to medium-low and add 4 tablespoons of Kerry Gold Unsalted Butter, the minced garlic, and all the fresh herbs—parsley, chives, thyme, and rosemary. Stir and cook for an additional 2-3 minutes, allowing the flavors to meld and the potatoes to become tender.
- Combine Steak and Potatoes: Turn off the heat and return the steak bites to the pan. Mix thoroughly with the herb butter and potatoes to evenly coat everything in the flavorful sauce.
- Serve: Transfer the garlic butter herb steak bites with potatoes to a serving dish and enjoy immediately while hot.

- For best results, soak the potatoes in ice water for at least 15 minutes to remove starch and achieve a better texture during cooking.
- Use fresh herbs for the richest and most vibrant flavor, but dried herbs can be substituted if needed (use about 1/3 of the fresh herb quantity).
