Description

These Fruity Pebbles Rice Krispies Treats combine the classic gooey texture of traditional rice krispies with the vibrant fruity flavors of Fruity Pebbles cereal for a colorful and delicious twist. Base Mixture

  • 5 tablespoons unsalted butter
  • 16 ounces miniature marshmallows (divided, see notes)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Cereals

  • 4 cups Fruity Pebbles cereal
  • 2 cups Rice Krispies cereal

Instructions

  1. Prepare the Pan: Spray a 9 x 9-inch pan with cooking spray and line it with parchment paper, leaving an overhang for easy removal of the bars later.
  2. Separate Marshmallows: Set aside 2-1/2 cups (120 grams) of the miniature marshmallows from the total 16 ounces for later use.
  3. Melt Butter and Marshmallows: In a large nonstick pot, melt the butter over low heat. Once melted, add all but the reserved 2-1/2 cups of marshmallows and stir constantly over low heat until the marshmallows are fully melted and smooth.
  4. Add Flavorings and Mix Cereals: Remove the pot from the heat and stir in the salt and vanilla extract. Gently fold in the Rice Krispies and Fruity Pebbles cereals, mixing until evenly coated.
  5. Add Reserved Marshmallows: Add the reserved 2-1/2 cups of marshmallows back into the mixture and stir until everything is well combined—take care not to mash the cereals to keep the texture light.
  6. Press into Pan: Pour the sticky mixture into the prepared pan. Lightly spray your hands with cooking spray to prevent sticking and gently press the mixture into an even layer, being careful not to compress too hard to avoid dense treats.
  7. Cool and Set: Allow the treats to cool and set at room temperature for at least one hour. Once set, use the parchment paper overhang to lift the treats from the pan and cut into squares with a sharp knife.

Notes

  • Use miniature marshmallows for best melting and binding results.
  • If desired, substitute the Rice Krispies cereal with another crispy rice cereal.
